Croquettes are more than just deep-fried balls or rolls. They have a rich history, originating in France and spreading throughout the world. From Spain (Croquetas de Jamon) to Cuba (Croquetas Cubanas) and beyond, these delicious treats have a way of bringing people together. I learned to make my version with my Spanish mom, adding a unique twist with tuna. This easy Tuna Croquettes are not only flavorful and simple but also open to customization, allowing for endless creativity in the kitchen. Substitute the tuna with ground chicken, beef, or ham, and do not forget to dip, bite, and repeat.

Ingredients:
Easy Tuna Croquettes
2 5 oz Albacore Tuna cans in water
1 medium Russet potato
1/2 cup of breadcrumbs
1/4 tsp of salt
1/4 tsp of pepper
1/4 tsp of garlic powder
1/2 tbsp of dried onion flakes
1/2 tsp of Old Bay
Cooking oil
Directions:
1.- Peel the potato and cook it in a saucepan with water and a pinch of salt until it becomes soft. Once the potato is cooked, mash it using a fork or a mixer and set it aside. Meanwhile, open the cans of tuna and drain the liquids using a colander.

2.- In a bowl, combine all the seasoning ingredients, the tuna, and the mashed potato. Let the mashed potato cool before mixing it with the tuna and seasoning. Thoroughly blend all the ingredients using a spoon or your hands, then shape the mixture into cylinders.

3.- Next, heat frying oil in a wok or deep frying pan over medium-high temperature, adding enough oil to cover the croquettes. To test if the oil is hot enough, try submerging the tip of a wooden spoon; if the oil starts bubbling, it's ready.

4.- Carefully fry the croquettes until they turn golden brown, which usually takes about 5 to 6 minutes, rotating them for even cooking.
Once cooked, remove the croquettes from the pan and place them on a dish lined with paper towels to soak up any excess oil.

5.- Serve the croquettes with your favorite dipping sauce.
